In English queso helado means something like frozen cheese or cheese ice cream. Even if its name may suggest otherwise it has nothing to do with cheese at all. In fact, its main ingredients are three different types of milk, similar to Torta de tres leches.


  • 1 litre fresh milk
  • 2 cinnamon sticks
  • 3 cloves
  • 200 grams sugar
  • 50 grams dried coconut, grated
  • 1 teaspoon cornstarch
  • 1 tablespoon vanilla
  • 5 egg yolks
  • 400 millilitres sweetened condensed milk
  • 400 millilitres unsweetened evaporated milk
  • Powdered cinnamon


Bring the milk with the cinnamon sticks, cloves, grated coconut and sugar in a heavy saucepan to boil. Drain and discard the cloves and cinnamon sticks and add vanilla and cornstarch – previously dissolved in water – and let it cool. Blend egg yolks and unsweetened evaporated milk. Mix it with the fresh milk and the sweetened condensed milk. Put it for several hours in the freezer until it is frozen. Before serving sprinkle it with powdered cinnamon.
